1lb pastry (1lb plain flour, 8oz of lard, or 8oz butter or 4 of each)
Peel the potatoes and chop into cubes, about ½inch across.
Mix the ingredients, and add enough water to just cover. Bake at 180 deg. Celcius (370 deg. F) for 2½hours. Cover with the pastry, thickly rolled, for the last half-hour. Serve with pickled red cabbage and HP sauce.
Pickled red cabbage is easy. Use cold, spiced vinegar. Salt the chopped red cabbage overnight, rinse off the salt and pat dry. Put it into pickling jars and cover with the spiced vinegar. Seal, and leave it for 1 month.
